Thai Coconut Chicken Soup
Winner of Network Solution's Soup Cookoff 2009
Ingredients (serves 10)
4 Cups Chicken Broth
1 stalk lemon grass thinly sliced (white part only)
2 medium carrots shredded
1 Bunch Scallions, Thinly Sliced
1 piece fresh ginger, peeled and thinly sliced
2 small Thai chilies, minced*
2 garlic cloves, crushed
1 (13-ounce) can unsweetened coconut milk
1 1/2 teaspoons sugar
1 (8-ounce) can straw mushrooms, rinsed
10 dried shitake mushrooms
4 limes, juiced
3 chicken breast halves boiled and cubed
Salt and freshly ground pepper
*For less heat - Do not mince peppers, slice lengthwise and float on top of soup, remove before serving
Directions
Place shiitake mushrooms in small bowl.
Bring a small pot of water to a boil.
Pour the hot water over the mushrooms and set them aside to re-hydrate for about 30 minutes.
Bring the chicken broth to a boil over medium heat.
Add the lemon grass, carrots, scallions, ginger, chilies, and garlic.
Lower the heat to medium-low, cover, and gently simmer on low heat for 10 minutes.
Uncover and stir in coconut milk, sugar, re-hydrated mushrooms, lime juice, and cooked chicken.
Simmer for 20 minutes, season with salt and pepper to taste.
Garnish with sliced lime or scallions.
Kim's Modifications
I sometimes substitute Sirracha instead of mincing chilis. Be careful...a little Sirracha goes a long way!!
If you are serving this to group you don't know, you might consider substituting corn for the shitake mushrooms. They have a texture that not everyone enjoys.
This recipe originally called for 1 cup long grain white rice. I have omitted it entirely as it tends to make this soup mealy if prepared in a slow cooker, frozen, or reheated. Instead, I like to serve this over jasmine rice prepared on the side.
This recipe does well in a slow cooker on low for about 6 hours. Expect a little separation but it will be fine once you give it a quick stir. |
